Time to start thinking about smoking your holiday turkeys. This is the Shockey Family tried and true recipe for perfect turkeys.
To start with, you need:
—an East Texas Smoker Company custom smoker, check your choices at www.easttexassmokercompany.com
—a large cooler
—a heavy duty trash can liner
In a large pot, heat the following until the salt and sugar are dissolved. Cool, then put in the large cooler lined with a trash can liner. Add 5# of ice and the 15-20 pound Turkey. Seal it and pack it in ice. Brine it overnight.
2 gallons of water
1-1/2 cups of Kosher salt
1-1/2 cups of brown sugar
1 Tablespoon ground black pepper
1/4 cup Worcestershire sauce
3 pods of garlic
2 onions, peeled and quartered
2 lemons, halved
2 oranges, quartered
1/2 bunch of cilantro
